Crunchy Mac and Cheese
PREP TIME: 10 MINUTES
TOTAL: 30 MINUTES
Ingredients (3-4 servings)
1/2 cup cream cheese
1/2 cup Asiago cheese
3 cups sharp cheddar cheese, grated
2 cups uncooked macaroni
3 cups milk
1 cup water
1/2 cup frozen peas
1/2 cup Panko bread crumbs
1 heaping teaspoon (each) of salt and pepper
1 level teaspoon of crushed chili flakes
1 full teaspoon of tomato paste
In a large cast iron skillet, add all the ingredients (except the peas, macaroni and Panko bread crumbs).
Cook on medium, stirring constantly, until the mixture comes to a boil and all the cheese has melted.
Add in the macaroni and peas and continue stirring until the sauce has been absorbed by the pasta, about 8-10 minutes.
Remove from the heat and sprinkle the entire surface with Panko bread crumbs.
Place in the oven, on grill, for approximately 3-4 minutes, until the crumbs form a golden crust. Remove from oven and serve.
