Ingredients

1 piece of tuna (approx. 8-10 oz)

1 orange, cut into segments

1 red onion, pickled

1 small box of arugula

Sesame seeds

Ingredients for Pickled Red Onions

1 red onion

1 cup water

1 cup red wine vinegar

1/3 cup sugar

Ingredients for Marinade

1/2 cup soy sauce

1/3 cup sugar

Salt and pepper

Ingredients for Sweet Chili Coriander Sauce

3/4 cup sweet chili sauce

1/4 cup coriander

1/4 cup sesame oil

2 limes (juice only)


Preparation – 3 hours before

Cut the onions into slices and place in a pan along with the remaining ingredients (sugar, water, vinegar), bring to a boil and refrigerate for 3 hours.

Step 1

Mix the ingredients for the marinade and cover the tuna with this mixture. Refrigerate.

Step 2

Mix together all the ingredients for the chili sauce in a bowl and set aside.

Step 3

Pre-heat the griddle and add the oil.  Do not overheat.

Step 4

Cover the tuna with sesame seeds and place on the griddle, turning to coat all sides. Refrigerate 20 minutes.


Presentation

Arrange salad on plates and add the pickled onions. Slice the tuna into small, even slices. Dribble the sauce over the fish; decorate with orange segments and a small bunch of coriander.
