Orange brûlée with rosemary
PREP TIME : 5 MINUTES
TOTAL TIME : 15 TO 20 MIUTES
Ingredients (for 4)
2 tablespoons of fresh rosemary
½ a cup of sugar
4 tablespoons of Greek yogurt
4 teaspoons of honey
Cut off both ends of the oranges. One at a time, using a sharp paring knife, remove the peel and all of the white skin, working from top to bottom, all the way around the orange. Cut the oranges crosswise and place them on a plate till needed, cut side down.
Heat a cast iron skillet over medium high heat. Spread the remaining sugar onto the iron skillet and when it begins to melt, place the oranges cut side down onto the melting sugar. Do not move them for 3 to 4 minutes, making sure that the sugar and the oranges begin to caramelize and burn slightly.
Sprinkle the rosemary over the oranges, and push some of the rosemary into them so they adhere to the oranges. Sprinkle half of the sugar on the oranges.
Once your oranges have begun to burn, put them in a preheated oven set at broil, for about 5 minutes, or until the tops of your oranges begin to caramelize and burn.
Place 2 orange halves per dish, add 1 tablespoon of yogurt per dish, drizzle, honey onto each dish and serve.
